Gluten Free Carrot Muffin Mix

Ingredients: Marcelle`s Flour Blend (bean flour, tapiocaflour, corn starch, potato starch)  sugar, baking powder, baking soda, cinnamon, nutmeg, cloves, salt,
What you need to supply:
  • Mixer, Muffin tin.
  • 1/2  cup nuts (optional)
  • 2  cup grated carrots
  • 3  eggs
  • 1/3 cup  crushed pineapple
  • 1/2 cup vegetable oil
  • 1/3 cup Corn Syrup
Directions: Empty 1 bag of Marcelle’s dry Carrot Muffin Mix in a bowl add eggs, vegetable oil, grated carrots, crushed pineapple drained well and corn syrup, nuts mix till blended .Bake at 350 F for 25to 30 minutes Check with a knife to see that they have been cooked through (the knife should come out clean).  Enjoy!
Makes 10 to12 muffins or 1 cake layer 9X13 inch pan.
