Gluten Free Cinnamon Muffin Mix
What you need to supply:
- Mixer, Muffin tray.
- 11/4 cup buttermilk
- 1/2 cup vegetable oil
- 4 eggs
- 11/2 tbl vanilla extract
- 2 tbl butter
- 1 tbl cinnamon
- 1/3 cup brown sugar
Ingredients: Marcelle’s Flour Blend (bean, tapioca flour, corn starch, xanthan gum, sugar, brown sugar, baking powder, baking soda, cinnamon.
Directions: Empty bag in mixing bowl add buttermilk, vegetable oil, eggs and vanilla extract Mix until blended, spoon into greased muffin tray. Topping: Add 2 Tbl soft butter, heaping 1/3 cup brown sugar, 1 Tbl Cinnamon mix until crumbles. Sprinkle on top of each muffin. Bake at 350F for approx. 30 minutes.
