Cinnamon Muffins GMO Free

The GMO free muffins list here all have nice texture and taste great. The Tiff flour we used to replace the corn starch is heavy dark flour; this muffin doe not rise as much as the original.

TIP/ If you do not have buttermilk, you can add a tablespoon of vinegar to regular milk, wait 5 minutes and it will become clumpy, it is good to go.

What you need to supply:
  • Mixer, Muffin tray.
  • 11/4 cup buttermilk
  • 1/2 cup sunflower oil
  • 4    eggs
  • 11/2 tbl  vanilla extract
  • 2 tbl   butter
  • 1 tbl cinnamon
  • 1/3 cup brown sugar
Ingredients: Marcelle’s Flour Blend (bean, teff flour, tapioca, starch), xanthan gum, sugar, brown sugar, baking powder, baking soda, cinnamon.
Directions: Emptybag in mixing bowl add buttermilk,  Sunflower oil, eggs and vanilla extract    Mix until blended, spoon into greased muffin tray. Topping: ,Add 2 Tbl soft butter, heaping 1/3 cup brown sugar, Tbl Cinnamon mix until crumbles.  Sprinkle on top of each muffin. Bake at 350F for approx. 25 minutes.
