Zucchini Muffin Mix

Ingredients: Marcelle’s Flour Blend (bean, tapioca, corn starch potato starch)  sugar, baking powder, baking soda, cinnamon, salt
What you need to supply:
  • Mixer, Muffin tin.
  • 1/3 Cup raisins
  • 1/3 Cup walnuts
  • 11/2 cups  grated Zucchini
  • 3   eggs
  • 3/4 cup  vegetable oil
  • 1/4 cup  molasses
  • 2 tsp  vanilla extract
Directions: Empty 1 bag of Marcelle’s dry Zucchini Muffin Mix in a bowl add eggs, vegetable oil, molasses, vanilla, grated zucchini, and add raisin/nut mix well. Bake at 350 F for approximately 30 to 40 minutes (depending on your oven). Use a tray that makes12 muffins Spray pan. do not overfill cups. This recipe does not rise much. Very moist in texture
